TORTELLINI IN MINESTRONE SOUP

Ingredients (4 servings): 1 package of Tortellini Formaggi
  • 1 1/2 lt. vegetable stock
  • 50 g. celery, diced
  • 100 g. carrots, diced
  • 100 g. zucchini, diced
  • 140 g. peas
  • 80 g. black-eyed peas, boiled
  • 2-3 tablespoons red pesto
Execution: Cook the Tortellini Formaggi in boiling salted water, according to the instructions. Heat the vegetable stock and add the carrots, the zucchini and the celery. Simmer for 10 – 15 minutes and add the peas and the black-eyed peas. Continue to simmer for 5 more minutes and add the Tortellini together with 1 cup of the boiled water that you used to cook the pasta. Add the red pesto, simmer for 1 – 2 minutes and take off the heat. Serve in a bowl.
