TORTELLINI AL FORNO WITH PEPPERONI AND RED SAUCE

Ingredients (4 servings): 1 package Tortellini
  • 12 slices of pepperoni
  • 200g fresh mozzarella
  • 1 can of tomatoes
  • 1 garlic clove
  • 2-3 anchovies (optionally)
  • 2 tablespoons olive oil
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon paprika
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • Fresh basil for serving
Execution: In a large pot, cook the Tortellini Primo Gusto in plenty of water, according to the package instructions. Put the canned tomatoes, salt, pepper, garlic, anchovies, balsamic vinegar, sugar and paprika in the food processor. Pulse to medium-high speed for 3-4 minutes. Preheat the oven to 180°C for 20 minutes. Once cooked, throw the pasta in a baking pan and mix it with the sauce. Top with pepperoni, some basil and the sliced mozzarella. Bake for about 10 minutes until the mozzarella has melted. Sprinkle with fresh basil leaves and some extra virgin olive oil.
