SPAGHETTINI IN SAGE BUTTER WITH SMOKED MOZZARELLA

Ingredients (4 servings): 1 package of Spaghettini No 3
  • 100 ml. vegetable or chicken stock
  • 100 g. butter
  • 50 g. sage leaves
  • 1 hot chili pepper, finely chopped (optional)
  • juice from 1 lemon
  • 100 g. thickly grated mozzarella or other smoked cheese
  • salt and thickly ground pink pepper
Execution: Cook the Spaghettini in boiling salted water, according to the instructions. Melt the butter in a pan and throw in the sage leaves. When the butter starts to turn brown, remove the sage leaves and set them aside. Pour the stock and half of the lemon juice into the pan and mix with an eggbeater. Drain the pasta and throw them into the pan. Mix well, throw in the remaining lemon juice and the sage leaves and serve. Sprinkle with a lot of pink pepper and thickly grated smoked mozzarella.
