RAVIOLI WITH ROASTED CHERRY TOMATOES & BASIL

Ingredients (4 servings): 1 package of Ravioli Formaggi
  • 3 tablespoons olive oil
  • 250 g. cherry tomatoes in 3 colours
  • fleur de sel (flower of salt)
  • 1/2 cup basil leaves, finely chopped
  • a few Aegina pistachio nuts, coarsely-ground (optional)
  • freshly ground pepper
Execution: Cook the Ravioli Formaggi in boiling salted water, according to the instructions. Cut the cherry tomatoes in half and put them on a tray. Drizzle olive oil and season with flower of salt. Roast them in a preheated oven at 160°C for 15 minutes. Drain the Ravioli with cheese and toss them into the tray with the roasted cherry tomatoes. Sprinkle with basil. Mix and serve after sprinkling with Aegina pistachio nuts (optionally) and freshly ground pepper.
