Ingredients (4 servings): 1 package Pappardelle
- 200 g. fresh cherry tomatoes
- 1 bunch of spearmint
- 3 green onions
- 1 teacup pitted olives
- Fresh mozzarella
- 5 tablespoons olive oil
- Salt-pepper to taste
Cut the cherry tomatoes into slices, finely chop the olives and the green onions, dice the mozzarella into small cubes and place them all in a large bowl.
Mix them with olive oil, spearmint and salt & pepper and let marinate.
In a large pot, cook the Papardelle in plenty of water, according to the package instructions.
Once ready, drain and toss the pasta directly into the bowl containing the marinade. Mix well, season with salt and serve.
