Ingredients (4 servings): 1 package of Linguine
  • 100 ml. olive oil
  • 100 g. toasted hazelnuts
  • 80 g. arugula (and a little extra for garnish)
  • 50 g. Parmigianno Reggiano cheese, grated
  • juice and zest from one lemon
  • Salt and freshly ground pepper
Execution: Cook the Linguine in boiling salted water, according to the instructions. In order to prepare the pesto, put the hazelnuts, the arugula and the cheese into the blender and mix. Slowly drizzle in the olive oil and season with salt and pepper. Drain the pasta and transfer them back into the pot, together with 2 - 3 tablespoons of the water that you used to cook the pasta. Add the pesto and the lemon juice and mix well. Sprinkle with lemon zest, some coarsely chopped hazelnuts and a few arugula leaves (optionally) and serve.
