Ingredients (4 servings): 1 package Farfalle
  • 4 chicken thigh fillets
  • 1 packaging cup of strained (Greek) yogurt
  • 1 tablespoon smoked paprika
  • 1 tablespoon honey
  • 1 tablespoon mustard
  • 1 garlic clove
  • 2 tablespoons olive oil
  • 1 package corn
  • 1 package baby spinach
  • 1 teaspoon coarse salt
Execution: Cut the chicken into bite-sized chunks. In a bowl, mix the chicken, 3 tablespoons yogurt, olive oil, paprika, salt and garlic. Cover the bowl with a plastic wrap and leave it in the fridge for at least two hours. Put a frying pan over the highest temperature, let it become piping hot and then place the chicken with its marinade. After two minutes, lower the heat and stir, cooking the chicken from both sides. It takes about 20 minutes for the chicken to be cooked fully. In the meantime, cook the Farfalle Primo Gusto in a pot with plenty of water, according to the package instructions. Once ready, and after making sure our chicken is also cooked, toss the Farfalle into the pan, along with the corn, the remaining yogurt and the spinach. Mix well and serve with a bit of extra baby spinach.
