Ingredients (4 servings): 1 package Farfalle
  • 1 package asparagus (fresh, not jarred)
  • 2 zucchini
  • 1 package mozzarella
  • 1 cup peas
  • 12 teacup olive oil
  • 2 tablespoons white vinegar
  • 1 tablespoon sugar
  • 1 teaspoon chilli flakes
  • Zest from 1 lemon
  • Χυμό από 12 Juice from ½ lemon
Execution: In a large pot, cook the Farfalle Primo Gusto in plenty of water, according to the package instructions. Use a peeler to cut the zucchini into thin strips. Put them in a bowl and add 2 tablespoons olive oil, sugar, chilli flakes and vinegar. Let them marinade for at least 10 minutes. Cook the peas for 2 minutes in boiling water, drain and set aside. Put a bit of olive oil in a pan and sauté the asparagus over medium heat. Add some of the pasta water (2 tablespoons) and continue to sauté. Once ready, pour the lemon juice and add the farfalle directly from their pot. Mix gently and serve at once, topping with the marinated zucchini, fresh mozzarella, extra virgin olive oil and peas, together with the lemon zest.
