COLD SALAD WITH CAVATAPPI, ROASTED PEPPERS, SMOKED SALMON & ARUGULA

Ingredients (4 servings): 1 package of Cavatappi
  • 1 yellow pepper
  • 2 red peppers, cut into pieces
  • 1 onion, cut in slices
  • 2 tablespoons olive oil (and a bit of extra olive oil for garnish)
  • 200 g. smoked salmon strips
  • a few arugula leaves
  • juice from 1 lemon
  • salt and freshly ground pepper
Execution: Preheat the oven to 180°C. Put the peppers on a tray, drizzle olive oil and season with salt and pepper. Roast for about 20 minutes. Cook the Cavatappi in boiling salted water, according to the instructions. Drain the pasta and mix them with the roasted peppers. When they get cold, add the onions and the salmon, mix carefully and serve. Drizzle some olive oil and lemon juice. Top it with arugula leaves and black pepper.
